Breakfast is an easy meal to have some fun with. In fact just this morning my son and I came up with a new one.
I love my green smoothies, but my kids prefer something a little sweeter on occasion. My son loves peanut butter and bananas so we decided to make a smoothie using those ingredients and it came out a real winner. He loved it!
We already had some homemade cashew cream which formed the base of the smoothie, but you could always use a non-dairy milk and some ice cubes instead. I've included the cashew cream recipe below too. (Cashew cream will keep up to 4 days in the fridge in an airtight container and is suitable for freezing).
Here is the recipe we came up with...
Peanut Butter & Banana Smoothie
1 cup or 125g of homemade cashew cream (recipe to make this below)
1 large ripe banana
1 heaped teaspoon of peanut butter
Throw everything in your blender and blend. Add water if needed to get your desired consistency. Easy, nutritious and delicious.
So, there you have it. Another yummy super-healthy breakfast option.
Cashew Nut Cream
2 cups or 250g cashew nuts, soaked overnight and rinsed well
1 - 2 cups or 200- 400 ml filtered water, depending on desired consistency
1⁄4 cup or 40g soaked pitted dates (I like medjools because of their sweetness)
1 tsp vanilla extract
Put rinsed cashew nuts and water into blender, blend until smooth. Add dates and vanilla and blend again. If you've never made cashew cream before then once you try it, like me, you'll find so many ways to make delicious breakfasts, smoothies and desserts with it. It's a great subsititute to dairy cream, or really thin it down and add herbs and spices to make a savoury dressing to your summer salads.
