Coconut & Berry Mousse Serves 4Equipment needed: Blender
2 cups or 250g cashew nuts, soaked for 4 hours or overnight and rinsed well1 ½ cups or 300ml filtered water¼ cup or 40g soaked pitted dates½ cup or 40g desiccated coconutA selection of berriesraspberry powder, (optional)
Place rinsed cashew nuts and water into blender, blend until smooth. If the consistency is too thick for you then add more water. Then add the dates and dessicated coconut and blend again. Spoon into bowls and add berries. The raspberry powder can be sprinkled over the top for added flavour and colour, (I use a tea strainer to do this).Enjoy!
